Gestational Diabetes: Snacks on the Go

Any ideas on what I can take with me holiday shopping?  I need some snacks that I can throw in my purse!

I have been asked several versions of this question  this week!  So here it is… my top five portable snacks that don’t require refrigeration!

Popcorn with Cheese Cubes

I make popcorn by using my stir crazy popcorn popper or in the microwave.  For the microwave, I mix ½ c popcorn kernels and 1 tsp of coconut oil in a small bowl and then pour into a small brown lunch paper bag and then sprinkle the salt over the kernels.  Close the bag and fold down.  Place the bag upright n the microwave.   Microwave until the popcorn slows popping (usually 2-3 minutes) 2.5 cups of plain salted popcorn is only 15-16 grams of carbs.  I then let the popcorn cool and pour into baggies with chunks of cheddar cheese.  Sometimes to stir things up, I do sprinkle parmesan cheese, cumin and chili powder over the popped popcorn.

Justin peanut butter

Peanut Butter (or Almond Butter) and Celery or Apples

Either put the nut butter in a small container or check out these handy pouches  


Apples/Pears/Grapes and Cheese Cubes or Nuts

Sprinkle a little lemon juice over the apples/pears to prevent them from turning brown after slicing.  Also, put the apples/pears and the cheese cubes or nuts in two separate bags/containers and then toss them into your purse.

Tuna Foil Pack with Triscuits

The tuna packs are super convenient and can hang out in your purse for weeks without issue.  I like to combine these with Triscuit crackers.  The Cranberry and Sage and the Dill flavors are my favorite with Tuna.

Kind Plus or Kind Strong Bars

Make sure you look at the labels for each flavor, some only have 15 grams of carbs and others have much more.

So I said I gave you the top five but the mixing and matching of the combinations above are endless!  What are your favorite portable snacks?  Any favorites that I missed?
